Avocado Bruschetta

Ingredients

·       2 whole ripe avocados, halved and pitted

·       1 tablespoon lime juice, freshly squeezed

·       1 cup canned or frozen corn, rinsed

·       1 cup black beans, drained, and rinsed

·       ½ teaspoon salt

·       ⅟3 cup nutritional yeast

Instructions

1.     Preheat oven to 350° F.  

2.     Line a baking sheet with parchment paper and set aside.

3.     In a medium sized bowl, add corn, black beans, salt, and pepper. Stir to mix.

4.    Cut avocado in half lengthwise and remove pit. Place each half on the prepared baking sheet skin-side down.

5.     Fill each half avocado with corn and bean mixture.

6.     Bake for 8-10 minutes or until warmed through.

7.     Scoop avocado mixture out of the shell and into a bowl and sprinkle with nutritional yeast and gently mix.

8.     Spoon avocado mixture over toast or serve with crackers.

Notes

o  Add a flavored oil. Garlic and herb-infused extra-virgin olive oils are excellent, or you can add a little spice with a small amount of chili oil.

o  Try grilled avocado with a light brushing of soy sauce or hot sauce.

o  Sprinkle it with fresh chopped basil, cilantro, parsley, or tarragon.

o  Avocado should be grilled with shell facedown.

o  Nutritional yeast is rich in nutrient slacking from vegetarian and vegan diets. It’s free of gluten, soy, and sugar. It is a great dietary addition for people with food sensitivities.

Fortified nutritional yeast is especially rich in B vitamins, including thiamine (B1), riboflavin (B2), niacin (B3), and B6 and B12. Trace minerals. These include zinc, selenium, manganese, and molybdenum, which are involved in gene regulation, metabolism, growth, and immunity.
