Ingredients

·       2 whole ripe avocados, halved and pitted

·       1 tablespoon lime juice, freshly squeezed

·       1 cup canned or frozen corn, rinsed

·       1 cup black beans, drained, and rinsed

·       ½ teaspoon salt

.     Linea baking sheet with parchment paper and set aside.

·       ⅟3 cup nutritional yeast

.    Cut avocado in half lengthwise and remove pit. Place each half on the prepared baking sheet skin-side down.

Directions

1.     Preheat oven to 350° F.  

3.     In a medium sized bowl, add corn, black beans, salt, and pepper. Stir to mix.

6.     Bake for 8-10 minutes or until warmed through.

5.     Fill each half avocado with corn and bean mixture.

7.     Scoop avocado mixture out of the shell and into a bowl and sprinkle with nutritional yeast and gently mix.

8.     Spoon avocado mixture over toast or serve with crackers.
